Peri-peri sauce is a sweet, tangy sauce from southern Africa that adds great flavor and color to dishes. We love topping our grass-fed steaks with peri-peri sauce when we're looking for a different flavor than the traditional steak sauce.

Prepare the Peri-Peri Sauce
Prep Time: 15 minutes
Ingredients:
- 2 tablespoons vegetable oil
- 4 cloves garlic crushed
- ½ medium red onion diced
- 2 tablespoons sweet paprika
- 2 large fire roasted peppers
- 6-7 Thai red chilis seeds removed and finely chopped
- ¼ cup sherry vinegar or red wine vinegar
- 3 tablespoons lemon juice
- Zest of one lemon
- 2 teaspoons brown sugar
- 4 teaspoons dried oregano
- 1½ teaspoons salt
- 1 teaspoon cracked black pepper
Instructions:
Step 1: Heat the oil then sauté the onions, garlic and paprika until softened (about 5 minutes).
Step 2: Add the onion mixture along with all the other ingredients to a blender.
Prepare the Ribeye
Prep Time: 15 minutes
Ingredients:
- 2 Tbsp olive oil
- 1 ½ tsp garlic salt
- 1 tsp sage
- 1 tsp rosemary
- Grass-fed ribeye steak
Instructions:
Step 1: Heat oven to 380 degrees
Step 2: Drizzle ½ Tbs olive oil over the meat
Step 3: Season both sides with garlic salt and sage
Step 4: Place in oven on broiling pan for 5-10 minutes, removing before it reaches your desired finish
Step 5: While steak is cooking in oven, heat pan or stovetop gridle to high heat and drizzle lightly with oil
Step 6: Remove steak from oven and place on heated pan, searing for 1-2 minutes per side, just long enough to sear the outside of the meat
Prepare the Asparagus
Prep Time: 15 minutes
Ingredients:
- 2 Tbsp butter
- 1 Tbsp olive oil
- 1 tsp coarse sale
- 1/4 tsp black pepper
- 3 cloves of garlic, minced
- 1 pound of trimmed asparagus
Instructions:
Step 1: Melt the butter over the stove on medium, high heat.
Step 2: Add in olive oil, salt, pepper, and garlic. Cook until fragrant, typically 30-45 seconds.
Step 3: Add asparagus and cook for 10 minutes
Plating
Place asparagus and steak on serving plate, top with rosemary and drizzle with peri-peri sauce.
